I had a great day today! I didn’t end up going to the body sculpt class. My roommate was feeling sick and wanted to rest and I prefer to go to classes with other people so I did my Bikini Ready Fast DVD at home.

After that I headed out shopping with my roommate. We stopped by Blue Sky bakery and I got a delicious blueberry muffin.

That’s the half I didn’t eat that’s left over for tomorrow.
We stopped by Target and I got sports bras and some other necessities. Then we did some wandering around Brooklyn and ended at Trader Joe’s where I bought some essentials.
For dinner tonight I made a casserole, a quinoa-eggplant casserole.

It’s delicious. Here’s the recipe:
I rinsed and covered 1 medium eggplant and 1 small eggplant with salt to get the bitterness and some of the liquid out for about an hour. Then I cooked 1 cup of quinoa in 2 cups of water.
I cut cup a head of broccoli and about 2/3 of a large head of cauliflower. I put the eggplant, broccoli, and cauliflower in a casserole pan and mixed it all together. Then I added the quinoa, 2 cups of Trader Joe’s tomato sauce, and a cup of part-skim mozzarella and mixed it all around. Then I baked it for about 40 mins at 375*.
I have a bit of a tummy ache now.
I was going to have some of these delicious sea salt brownies I bought at Trader Joe’s but I think I should take it easy on my stomach.

Oh and I’m having an apple and beer now. I got the last two loose bottles of Brooklyn Pennant Ale.

All-in-all a great weekend and a good night. And only 20 more minutes until Mad Men!
*** Edit the next day. Remember to rinse the quinoa before cooking, I forgot to do this and the results for my stomach were not fun. And upon eating more casserole I think I should have parboiled or briefly steamed the veggies (not the eggplant). Next time I will do this and of course report back.
